To-Cook List

It has been far too long since I’ve ventured into the kitchen.  Tonight, the husband has gone with his friends to Little India in Jersey City for some desi food and film.  I’ve opted to stay home to do some writing and, hopefully, some cooking!

In preparation for the evening and the multitude of forthcoming evenings during which I plan to cook, I’ve compiled a list of vegan (or vegan-izable) recipes I’d like to tackle:

  • Aloo tikki
  • Vegetable biryani
  • Vegetable samosas
  • Tofu tikka
  • Mattar tofu
  • Shahi tukda (Indian bread pudding)
  • Eggplant chana masala (from The Kind Diet)
  • Mango lassi
  • Curried potato salad
  • Coconut saffron rice
  • Rajma
  • Naan

And non-Indian or Indian-inspired:

  • Spinach pie
  • Green bean salad
  • Coffee fudge brownies
  • Chocolate peanut butter cups
  • Peanut butter pie
  • Breakfast bake
  • Banana bread
  • Muffins & scones

Wow, this list got long!  Any requests?

  1. Please, oh please, tackle vegan Mac & Cheese! I’ve yet to find one that works for me. So many recipes include nutritional yeast, but, sadly, ny and I don’t get along 😦

    I’d like to make vegan thin mints soon…I miss those little devils.

    I did green bean salad for my first vegan thanksgiving! Pacific Foods makes a great vegan mushroom soup you can use for that.

    There are tons of PB cup recipes, but here’s a less chocolatey (blasphemy!) one from Oh She Glows. Dunno about this recipe, but Oh She Glows has lots of raw and/or healthy options for a dessertaholic like me:
