Dish #15 – Indian-Style Tofu Scramble

Today is a real treat – please welcome my Guest Chef and husband!

As I’ve blogged before, the husband is extremely good at cooking things up without a recipe and improvising in the kitchen to great effect.  (It’s really nauseating.)  He doesn’t struggle with the basics like I do.

Since we’ve gone vegan, he has created a new breakfast dish so we won’t miss meat and eggs.  It’s absolutely delicious and since it uses Indian spices, I wanted to share it here with all of you.  This recipe yields 5 servings.


1 package firm tofu
1 package vegetarian sausage (we like Italian-style), sliced into chunks
1 bunch of fresh spinach, chopped
3/4 large onion, diced
2 plum tomatoes, diced
Mushrooms and peppers as desired
2-3 tbsp curry powder
1 packet sambal asli chili sauce (or hot sauce of your choice)
2 tbsp olive oil
Salt to taste


Cut up all ingredients and use a fork to scramble the tofu.

Heat the oil on medium flame and saute the onions until brown.  

Add tomatoes, sausage, mushroom and curry powder, and mix completely.

Cook (stirring) 5-8 minutes, then add the tofu and mix until completely yellow.

Cook (stirring) 5 minutes, then add spinach.

Cook (stirring) for an additional 3-5 minutes until spinach wilts and is done.

Turn flame off and let it cool.  Enjoy!
